... this encounter, in 1927, led to the founding of the dairy, the Caseificio di Castelfondo – fruit of the passion of farmers who, with skilful hands and heartfelt dedication, set to work to craft genuine cheeses, the purest expression of their land.
The year 1955 saw the building of the original dairy, the living heart of the village, where the scent of milk and the heat of copper have guarded for decades the secrets of the art of cheese-making, handed down from generation to generation.
With the passing of time, tradition has come into contact with innovation, but without ever losing sight of the values that guide us:quality, passion and respect for nature.
Today, thanks to the efforts of those who work with dedication every day, the Caseificio di Castelfondo brings to the table the authentic flavour of our valley – a taste of its history, its nature, and its heart.

Cheese, for us, is more than just food: it is a story handed down through generations, a daily gesture that stems from a love of the land, its pastures and animals. From the dedication of farm work to the skilful transformation of milk by our master cheesemaker, each wheel embodies an ancient knowledge, shaped by unhurried gestures, patience, and respect for natural cycles. The grass of the pastures, the air of the mountains and the expertise of our cheesemakers all contribute to creating unique flavours that are profoundly linked to our territory.
