Old Trentingrana
A cheese made from partially skimmed raw milk with a typically grainy texture that changes with aging, and breaks into flakes under the pressure of the knife. Hard, smooth, dark yellow rind. The edible rind of our Trentingrana can also be used for various recipes. It is excellent warmed over a wood fire, or used to flavour barley soup.
Trentingrana is a cheese that conforms to the Grana Padano PDO, but has its own specific territorial identity and a stricter specification.
Territorial specificity: Its specificity has been recognised thanks to the mountainous characteristics of the production area and the strict regulations on cattle production and feeding.
Strict Specifications: The specifications for Trentingrana are more restrictive than those for Grana Padano, permitting the use of raw milk and prohibiting the use of silage for cow feeding. Produced with milk from cows raised in the territory, fed with GMO-free fodder and feed.

USE:
Excellent for grating, but also delicious with smoked speck with juniper berries, rye bread and a full-bodied red wine such as Teroldego or Lagrein. Perfect for an afternoon snack, with an authentic typically Trentino taste.
