USE:
Marnea with saffron is perfect for enriching risottos, bringing to mind the elegance of the classic risotto alla Milanese. It is also excellent with vegetable veloutés, adding creaminess and a warm, enveloping fragrance.
In summer, it is at its best on warm crostini with a drizzle of sweet honey, while for an aperitif it pairs perfectly with delicately flavoured, non-smoked cured meats.
To appreciate its aromas at their best, the ideal pairing is an aromatic white wine such as Gewürztraminer, whose fragrance elevates the cheese’s finesse without overpowering it.
